These peppers are really good served with fish. Just take a green, red, yellow, and orange bell pepper, and 2 jalapeno peppers (large ones), and clean and seed them. Rough chop along with some green Mexican onions, green part included. Place in a saute pan with 2-3 tablespoons olive oil. Saute till peppers begin to soften, then remove from heat. Salt and pepper to taste. This is also very good with fresh herbs added to your taste.
Please be very careful handling the jalapenos. Do not rub your eyes or face or mouth with your fingers if you have been handling them, as they, and their seeds, are very hot!
